Super EASY Chicken, Broccoli & Rice Dinner Recipe!

Chicken, Broccoli & Rice Dish (NOT soup)

As a mom of three children, who of course are all very active and are continuously GO, GO, GO! I know how important it is to be able to make a healthy meal, but also having the need for something quick and that doesn't require an hour or so of time for preparing and cooking the meal. This is why I figured I'd share some of my quick recipes with you. We all have different tastes and you can substitute some ingredients to better suit your diet and/or taste buds. 


This is seriously so easy! If you haven't really cooked from scratch, but would like to start here is a great starting meal. You only need FOUR simple ingredients! 

  1. Boneless Skinless Chicken Breasts
  2. Broccoli (frozen or fresh will work, I used fresh)
  3. Rice (I used white, but you could use brown or wild rice, etc)
  4. 1 can of Cream of Chicken or Mushroom Soup OR Chicken Broth 
  5. Seasoning of your choice for chicken. I used Adobo. 
For the ingredients I honestly just used what I had at home, I didn't really plan this meal out. I had boneless, skinless chicken breasts, fresh broccoli, white rice (minute rice!) and I would have preferred cream of chicken soup, but I only had chicken broth. I added the chicken broth for a little more flavor, but you could probably even leave it out. As for the seasoning, just season your chicken as you normally do. Sometimes I season my chicken with Lawry's Seasoning Salt. You could use an Italian Blend seasoning, Greek, whatever your taste buds water for. For this chicken I used Adobo and would have also used some Sazon if I had any. 

Lets Get Cooking! 

Boil the water for your rice, BUT! Substitute 1/2 cup of water with 1/2 cup of cream of chicken/mushroom OR chicken broth. While waiting for it to boil, prepare your broccoli (see below). Then cook your rice as directed. 

Dice up your broccoli! I just cut the branches or "baby trees" off of the stalk, the bigger baby trees I cut in half. Boil your broccoli in water with 1-2 tbsp of butter (depending on amount of broccoli), you may also salt the water. Cover the broccoli as it boils to help steam it and soften it quicker. If you have a steamer then use that, I don't have one. 

Grill your chicken! All I do is "grill" the chicken on my stove in my grill pan (ridged bottom, pretty neat pan). I don't grill my chicken in oil or butter. I just place it in the pan, season it, let it cook, flip and season again then flip back and forth a few times till cooked through. You can cook your chicken in oil or butter if you wish. Once your chicken is cooked through, remove it from the pan. While your pan is still hot CAREFULLY poor the rest of your chicken broth in the pan and scrape the bottom of the pan. Set aside. 

Once everything is cooked, "assemble" your meal! 

Spoon your rice onto/into your dish, then lay a piece of chicken on top of the rice. Spoon the chicken broth from the pan on top of the chicken and rice. Then add some broccoli on top. 

Enjoy! 

Honestly, I think this meal only took about 15 mins. The broccoli took the longest to cook at about 15 minutes to get it nice and soft, if you have a steamer or buy frozen broccoli in a steamer bag it'll only take about 5-7 minutes! The rice only took 5 minutes as I used Minute Rice and the chicken takes roughly 5 minutes. So if you follow the steps above and have everything going at about the same time it shouldn't take long at all. 

My 8 year old and I loved it! My 3 year old only ate the rice and my 4 year old is the picky eater/texture aversion so he always has his own "meal".

Cade, my nearly 4 year old really needs a daily vitamin due to his lack of eating. We are working on figuring out what is causing his eating issue and are leaning towards to severe reflux. For now, I give him a daily vitamin. Before discovering VoloVitamins it was a fight to get him to chew up children's chewable vitamins. The hard candy like ones are gross and gritty and the gummy ones... lets face it, they are just plain old gross! So we gave VoloVitamins a shot and I was a little unsure of him actually drinking them, personally I think most things that you mix into water are not so great tasting. However, he drinks them just fine added to water! He greatly prefers the orange over the berry burst though and Ezio seems to be opposite so I guess that worked out! 


Cade loves helping me mix his vitamin into his water in his cup. The other day when we got home from the park he told me he wasn't feeling good and wanted his vitamin. He hadn't had a VoloPak yet for the day so I let him help me mix one up for himself, in turn of course I then had to do the same for Ezio so he could be like his big brother. I feel great giving VoloVitamins to both of my boys and I would also give them to Jedilynn if she would drink it, but I swear she is picker then my Mr. Cade who is the pickiest! 

Personally I have tried the VoloVitamins Energy and Wellness & Immunity and they are not horrible tasting, but it's also not something I'd drink all day so I guess it's a good thing that it's only an 8oz glass each day. I didn't have to choke it down or plug my nose and drink it. I'm rather picky about the things I will eat and drink... hmmm... I guess we see where my children get their finickiness from huh...?

Sustainablebabyish Organic Overnight Bamboo Fleece Fitted Cloth Diaper ($24.95ARV) is a fitted diaper made with organic bamboo and cotton fleece inner and an outer layer of soft jersey. Since this is a fitted diaper, you do need a cover for over it. We've used this with a fleece soaker, wool soaker and even a Flip cover. All have worked great.


 This fitted diaper comes with a snap in soaker as well as a shorter lay in soaker. They are made with three layers of bamboo fleece and also topped with soft jersey.



Cade is 3 years old and weighs 40 pounds, but is fairly slim and tall. It is very hard to find diapers that fit him and do not dig into his hips and cause him pain. Sbish has an X-Large size which fits from 32 pounds and up! I was so excited to see this larger diaper available and even more so when I tried the diaper on him and seen how much more room he has to grow into! This is very rare when looking for a diaper for Cade. As you can imagine, with Cade being 3 years old he is a heavy wetter and while we do have other diapers that fit him, he really can't be in the same diaper no matter what diapering system it is for more then about an hour usually! I don't have enough diapers large enough for him to be changing him 16+ times per day and then still manage to have diapers clean and available to use for him over night. As for this diaper!! He can wear it all night long, about 12 hours give or take! Yes, 12 hours in this one diaper, all through the night and wakes up with his pajamas and bedding dry! Oh, it was like a miracle the first few times he wore this diaper. I refuse to use this diaper during the day because it is so awesome as a night time diaper for Cade. It is most definitely our night time solution diaper! He has even woken up after a full 12 hours of sleep and the diaper not even be fully soaked and from a guesstimate I'd say he could go about 14 hours in this diaper, while I would not allow him to unless he were sleeping! Both of the boys have very sensitive skin so during the day the longest we let them go is about two hours in one diaper. 

I love how absorbent this diaper is, yet it doesn't take forever to dry. When washing the diaper, obviously you take the lay in soaker out, but you also unsnap the snap in soaker. Why should you un snap it before washing? If you leave it snapped together you will put too much stress on the snaps, causing them to rip or pull out of the fabric leaving you with a ruined diaper. It also helps the soakers and the diaper get cleaner, the more open the diaper is, the better water and detergent can flow through the fibers of the diaper and get a nice and deep clean. As for drying, I dry all of my diapers on low heat. When using 4-6 wool dryer balls this diaper is dry in just one low heat, automatic sensor drying cycle. If I do not use the wool dryer balls then I do have to run it through the dryer one more time, but for me that is not an issue. I don't complain about diapers taking forever to dry because I look at it this way, if the diaper is absorbent and can hold more then other diapers or other layers of diaper of course it will take a while longer to dry as it has more absorbency.
