Keeping Your Finances in Check Over the Holidays

Sleigh bells, jolly laughter and sugar plum dreams mean one thing: Santa Claus is coming to town! While this is a time of joy and love, it is also peppered with stress and worry, especially when it comes to finances. Between presents for your family members, friends, coworkers and neighbors, to hosting holiday parties to the cost of lights and decorations, the holidays can certainly weigh on your pocketbook.

The key to enjoying the festivities without the added stress of going into debt is to be smart and plan ahead. Check out some of the following suggestions to keep your bank account out of the red through the end of the year.

Make a List and Stick to It

Take the time to think ahead and make a list of each of the people you want to buy presents for this year. Once you have a list, take your planning to the next level and decide what it is you would like to give them. This will be especially helpful in a variety of ways, including:

  • Removing the possibility of overspending or buying more presents for any one person than you intended.
  • Removing the risk of impulse purchases.
  • Allowing you to price shop so you can get the best deal on each gift, including giving you the chance to watch for special holiday sales.
  • Making sure you do not forget anyone and cause yourself additional stress.

Set Aside the Money


Once you have set a budget for the amount you are willing and able to spend on the holidays this year, find a way to set it aside. Easily keep track of your money now and throughout the year by employing these tips.

  • Set aside a special pot of money just for the holidays. Whether this is a bank account you put money in specifically for the holidays or a literal jar you have in your home that you periodically deposit money into, keep your holiday money separate from all of your other money. This will help you know exactly what you have available to spend and keep you from spending money that should be going toward more important things, like the mortgage and food.
  • Only use cash for your holiday spending. If you would rather draw the money out of your normal bank account, withdraw the money into cash and know that is all you have to spend. Being able to visually see the amount of money you have left to spend will help you to make economical choices. Once the money is gone, you are done spending for the holidays.

Look for Alternatives to Purchased Gifts

If the wallet is tight this year, consider other options for gifts you may give rather than ones purchased in the store. For a neighbor you may offer to walk their dog or shovel their sidewalks. If you are making holiday treats, make a few extra and take some treats to friends or to the office. Encourage children to be creative and make each other homemade gifts.

Let Someone Else Host This Year

While presents are a costly part of the holiday season, another stress on your finances is holiday parties and dinners. Purchasing the food, drinks, decorations, and outfits for these events while entertaining can quickly add up to a pretty penny. Consider allowing (or even asking!) someone else to host the party this year. If you still find yourself playing host, look for ways to ease the burden on yourself by making it a potluck meal or a BYOB.

Save Your Receipts

By saving all of your receipts, you can then log your spending when you get home in a notebook or spreadsheet. This will help you to keep a running total and assist in staying within your budget. Another less thought of reason for keeping receipts is that some stores will reimburse you for the difference if an item goes on sale after you purchase it. While this is not true of all stores, it never hurts to ask and you will need your receipt to get your money back!



If after all you can do you still find yourself in financial trouble over the holidays, the last thing you want to worry about is losing your home. Luckily, there are tactics you can use to work through this hard time, such as free or very low cost housing counseling. Using such resources can help alleviate financial stress and help you to still provide a happy holiday.

Through the hustle and bustle of holiday shopping, use the tactics above to help your spending stay worry free and help you enter the new year feeling in control of your finances.

Super EASY Chicken, Broccoli & Rice Dinner Recipe!

Chicken, Broccoli & Rice Dish (NOT soup)

As a mom of three children, who of course are all very active and are continuously GO, GO, GO! I know how important it is to be able to make a healthy meal, but also having the need for something quick and that doesn't require an hour or so of time for preparing and cooking the meal. This is why I figured I'd share some of my quick recipes with you. We all have different tastes and you can substitute some ingredients to better suit your diet and/or taste buds. 


This is seriously so easy! If you haven't really cooked from scratch, but would like to start here is a great starting meal. You only need FOUR simple ingredients! 

  1. Boneless Skinless Chicken Breasts
  2. Broccoli (frozen or fresh will work, I used fresh)
  3. Rice (I used white, but you could use brown or wild rice, etc)
  4. 1 can of Cream of Chicken or Mushroom Soup OR Chicken Broth 
  5. Seasoning of your choice for chicken. I used Adobo. 
For the ingredients I honestly just used what I had at home, I didn't really plan this meal out. I had boneless, skinless chicken breasts, fresh broccoli, white rice (minute rice!) and I would have preferred cream of chicken soup, but I only had chicken broth. I added the chicken broth for a little more flavor, but you could probably even leave it out. As for the seasoning, just season your chicken as you normally do. Sometimes I season my chicken with Lawry's Seasoning Salt. You could use an Italian Blend seasoning, Greek, whatever your taste buds water for. For this chicken I used Adobo and would have also used some Sazon if I had any. 

Lets Get Cooking! 

Boil the water for your rice, BUT! Substitute 1/2 cup of water with 1/2 cup of cream of chicken/mushroom OR chicken broth. While waiting for it to boil, prepare your broccoli (see below). Then cook your rice as directed. 

Dice up your broccoli! I just cut the branches or "baby trees" off of the stalk, the bigger baby trees I cut in half. Boil your broccoli in water with 1-2 tbsp of butter (depending on amount of broccoli), you may also salt the water. Cover the broccoli as it boils to help steam it and soften it quicker. If you have a steamer then use that, I don't have one. 

Grill your chicken! All I do is "grill" the chicken on my stove in my grill pan (ridged bottom, pretty neat pan). I don't grill my chicken in oil or butter. I just place it in the pan, season it, let it cook, flip and season again then flip back and forth a few times till cooked through. You can cook your chicken in oil or butter if you wish. Once your chicken is cooked through, remove it from the pan. While your pan is still hot CAREFULLY poor the rest of your chicken broth in the pan and scrape the bottom of the pan. Set aside. 

Once everything is cooked, "assemble" your meal! 

Spoon your rice onto/into your dish, then lay a piece of chicken on top of the rice. Spoon the chicken broth from the pan on top of the chicken and rice. Then add some broccoli on top. 

Enjoy! 

Honestly, I think this meal only took about 15 mins. The broccoli took the longest to cook at about 15 minutes to get it nice and soft, if you have a steamer or buy frozen broccoli in a steamer bag it'll only take about 5-7 minutes! The rice only took 5 minutes as I used Minute Rice and the chicken takes roughly 5 minutes. So if you follow the steps above and have everything going at about the same time it shouldn't take long at all. 

My 8 year old and I loved it! My 3 year old only ate the rice and my 4 year old is the picky eater/texture aversion so he always has his own "meal".

Eating great food is one of the best parts of the holiday season.  Maybe your family has a running tradition for your Christmas Eve dinner or Christmas Day dinner.  However, if you are looking to try something new or even start a new tradition, here are some great alternatives to consider.

Traditional with a Twist

Traditional Christmas dinner often consists of ham, roast beef, turkey, or duck.  You can keep up your family tradition by serving your meat of choice with new sides.

Here are some other side dish options to include on the table this year:

Potato salad
Wild rice blend
Baked macaroni and cheese
Sour cream and chive mashed potatoes
Steamed veggies (broccoli, cauliflower, carrots, etc.)
Spinach and berry salad
Broccoli salad
Fruit salad
Cornbread
Garlic cheese biscuits
Scones

If your family members are very tradition bound, this may be the best mix up option to try.  You can make the traditional meal and add one or two new dishes to the lineup.  Who knows, your new dishes may become the new family favorites!

Italian Feast

Consider switching things up this year with an Italian feast.  For example, you can serve lasagna or chicken fettuccine alfredo with salad and garlic bread.  

If you have more people involved, consider setting up a pasta buffet bar.  A buffet bar is a fun way for everyone to socialize as they create their own dinner.  Will you have some picky eaters in your group?  Letting each person build their own custom plate is the perfect way to meet everyone’s unique tastes.   

Offer multiple options in each category:

Pastas (all pastas should be cooked, drained, and served promptly)
Rigatoni
Fettucine
Spaghetti
Angel hair
Bowtie
Frozen cheese ravioli
Frozen tortellini
Tri color rotini
Sauces
Marinara sauce
Olive oil
Alfredo sauce
Garlic cream sauce
Pesto
Stroganoff
Toppings
Mushrooms
Fresh spinach
Fresh tomatoes
Sun dried tomatoes
Crumbled bacon
Grilled chicken
Diced ham
Meatballs
Shrimp
An empty table, counter, island, or bar works the best for serving food buffet style to your guests.  How you place the food on the surface can greatly impact the overall experience as well.  Check out these additional helpful hints for serving dinner buffet style.  

South of the Border

If you love Mexican food, try one of these menu alternatives:

Salsa Roast
Beef roast
Salsa (red or green, heat level of choice)
Canned sweet corn
Canned black beans
Corn tortillas
Sour cream
Fresh cilantro
Lime wedges

Place beef roast in slow cooker.  Cover with entire bottle of salsa.  Cook on low for 8 hours.  Shred meat with forks.  Add sweet corn and black beans just before serving.  Serve with corn tortillas.  Top with sour cream, cilantro, and a squeeze of fresh lime.  

Salsa roast is a delicious and simple recipe.  You can also use the meat to make enchiladas or burritos.  

Mexican Lasagna
Corn Tortillas
Ground beef or chicken
Enchilada sauce (red or green)
Shredded cheese
Kidney beans
Refried beans
Salsa
Sour cream

Cook the ground beef or chicken.  Cover bottom of 9x13 pan with corn tortillas.  Cover tortillas with ½ of cooked meat.  Sprinkle meat with cheese, salsa, and kidney beans.  Cover with another layer of corn tortillas.  Spread a layer of refried beans.  Top refried beans with ½ of enchilada sauce.  Cover with corn tortillas.  Repeat the meat, cheese, salsa, and kidney bean layer.  Cover with corn tortillas.  Spread remaining enchilada sauce on top. Cover with cheese.  Bake in oven at 350 until cheese is bubbly and golden brown.    

Mexican lasagna is a fun way to serve the best of Mexican flavors in one simple dish.  While this meal may require some prep time, clean up is relatively quick!

Taco or Nacho Bar
Tortillas or tortilla chips
Ground beef (browned)
Chicken (cook in slow cooker with salsa of choice)
Black beans
Refried beans
Fiesta rice
Shredded lettuce
Diced tomatoes
Chopped onion
Cilantro
Ranch dressing
Salsa
Sour cream
Avocado or guacamole

Serve all of the ingredients in individual bowls buffet style and let your guests build their own dinner.  A taco/nacho bar can be especially festive if you serve the individual ingredients in fun holiday containers.

Dinner Activity

Turn your Christmas dinner into a fun activity for everyone involved.  Each person can make their own dinner by setting up a pizza making factory in your kitchen.  

Individual Pizzas
Frozen roll dough, pizza dough, refrigerated biscuits, sandwich thins, or pitas
Pizza sauce
Alfredo sauce
BBQ sauce
Ranch dressing (use as sauce)
Pesto sauce
Shredded mozzarella cheese
Ricotta cheese
Pepperoni
Sausage
Ham
Grilled chicken
Bacon
Fresh tomatoes
Green peppers
Mushrooms
Black olives
Pineapple
Red onion
This dinner activity usually works best with smaller groups of people, unless you have a giant kitchen and multiple ovens.

Brunch


Consider serving the big meal of the day in the late morning.  Brunch is a great time to serve incredible breakfast foods without feeling rushed.  You can even consider serving brunch in the late morning and then serve your traditional Christmas dinner, or one of the other alternatives above, later in the day.  For something a bit unconventional, but very fun, serve brunch on Christmas Eve night!

Here are some suggestions of delicious and festive brunch foods.  You can serve a few as a meal, or make several options and serve a brunch buffet:

Chocolate batter pancakes with crushed peppermint
Pumpkin chocolate chip pancakes or muffins
Cranberry muffins
Quiche
Breakfast casserole (eggs, hashbrowns, sausage, cheese, peppers, onions)
Mini fruit pizzas (use sugar cookies as the crust)
Baked orange french toast
German pancakes with berries and whipped cream
Gingerbread waffles
Cinnamon Rolls
Ham, bacon, or sausage
Fresh fruit
Various juices
Hot cocoa  

Get ready to break out of the box and try something new this holiday season.  One of the ideas above is sure to be a hit with your family.
