Pizza Pockets
Not sure how or why, but Dan decided to give this a try and had no clue how it would turn out. I also had no idea what he was making until he brought me a plate of them. I always do the cooking so I will admit, I was a tad nervous about what he was making. However, these are definitely tasty and I'm glad he went out on a limb and gave them a shot. I will take more and better pics next time we make them. After Dan made the first batch we were still hungry (the can had fallen out of the fridge the day prior so we lost two biscuits) so we used our second can of biscuits and he didn't hear me when I said I wanted to take step by step pictures so this is all I was able to get for now.
Ingredients:
1 can of your choice of biscuits (we used buttermilk and flaky, both tasted great)
1 jar of pizza sauce (or make your own)
1 cup of shredded pizza cheese
toppings or rather stuffings of choice - we used Canadian Bacon, pepperoni and black olives
Directions:
1. You want to cut your biscuits in half as if you were slicing open a roll to make a sandwich. Do not cut all the way through. I found that cutting with a butter knife was easier than a steak knife, but if you have a sharp, smooth blade that would work as well. I gently let it rest in my palm and gently gripped the top after cutting it and then slowly and carefully cut through. Lay open on baking sheet.
2. Spoon about a teaspoon of pizza sauce on the bottom of each "pocket"/biscuit, you can put sauce on the top of the pocket as well if you'd like. I don't care for a lot of sauce so I just brushed a little bit on, less than a teaspoon.
3. Add your toppings of choice. Then add cheese to your liking.
4. Fold top of pocket closed and press edges together to "seal" your stuffings inside. One of ours had a small hole, I didn't cut it with the top thick enough to stretch over the stuffings.
You can add more sauce and cheese to the outside top of the pocket if you'd like.
5. Bake according to biscuit directions.
Next time I am making these with the kids so I'm sure my updated pictures will be rather messy, but hopefully they will be better than whats above. These would be great to make on a busy night or weekend when you are hungry and have to feed the family, but you don't have time for a sit down dinner. Especially if you don't use a lot of sauce! I honestly had nothing fall or squirt out of mine.
What is your favorite pizza topping. Do you like easy "on the go food"?
