Taco Roll Ups

- 2 packages of cream cheese
- 1 package of taco seasoning
- 1 package (10ct) 8 inch tortilla shells
If you let your cream cheese sit out at room temperature for a bit to soften it up, it is much easier to mix! If it softens up enough you can even do this by hand, I used my mixer because I probably have carpel tunnel and my wrists kill me after a minute of stirring. Also, make sure the taco seasoning you buy does not have little hard pieces in it, I can't remember the brand that does. It's not horrible, more of a texture preference.
STEP 1:
Place your cream cheese in your bowl, add about half of your taco seasoning, mix until all cream cheese is a yellowish/orangeish (color depends on your seasoning). Be sure to scrap the bottom and sides of your bowl, especially if you use a mixer.
STEP 2:
You can use a butter knife or spatula to spread the taco cream cheese mix on to your tortilla. I prefer using a butter knife. Just spread a thin liner across the entire tortilla covering to the very edge all the way around.
STEP 3:
ROLL IT UP!
Starting at the end closest to you tightly roll up your tortilla. The ends wont be very tight, but that is okay.
Once you've rolled up your tortilla, then cut off both ends where it is loose.
STEP 4:
Cut the rest of your roll up into roughly half inch pieces or bite size. Use a sharp serrated blade to cut your roll ups. Put as little pressure on the roll up as possibly other wise you will squish it. Gentle cut back and forth.
Repeat steps 2-4 the remaining tortillas. With the 10pk of 8in tortillas, 2 boxes of cream cheese and half a packed of taco seasoning I was able to use all 10 of the tortillas and used up all of the taco cream cheese mixture. Pretty quick to make and super yummy!
The ends you cut off of your roll ups are NOT trash, Dan always steals the ends when I make these, he's lactose intolerant and that is a TON of cream cheese!! I ask him why he eats so much of these even if they will cause an upset stomach and he says they are too good to resist.
My next adventure with these roll ups is I'd like to bake them and top them with cheese, I know MORE dairy?! Yes, I am a Wisconsinite!

ReplyDeleteNo, I have not, but it has been a thought. Only thing is the cream cheese is fairly chilled still to hold it's form so it is not a liquid and running all over.

ReplyDeleteWe all love to eat tacos in our house. I particularly like the ease of preparation of the taco-roll-up meal. One of the best things about tacos is the fillings can be adjusted o fit individual tastes. This works well with various ages in each family.

ReplyDeleteThanks for the fabulous recipe idea - if it were up to my Honey/Hubby - EVERY night would be Taco Night - but at the same time, easy to eat and NEAT (no sloppy joes please!) finger food rules around here. My guy likes it spicy so I added some drained, diced canned jalapeno peppers - which made them like super easy to make Jalapeno Poppers. Thanks again for the idea - I'm thinking of maybe adding some crumbled bacon to the the cheese mix next time - you can't really miss with bacon on anything!
